However, when used in the context of Ibérico pigs and Jamón Ibérico (Iberico ham), it typically refers to the Spanish breeds. The two main breeds associated with high-quality are the "Pata Negra" and the "Manchado de Jabugo."



The importance of breeding in the pasture


In the southwest of Spain there is a Mediterranean landscape composed of grasslands, bushes and medium-sized trees, in which the presence of holm oak and cork oak stands out. There, the Ibérico pigs stay during the breeding and fattening phase called “montanera” which is crucial for the production of high-quality.

For five to six months, they enjoy freedom in the countryside, feeding naturally with what they find in their environment.


A particularity of Jamón ibérico Leg is that between its muscles it has the ability to insert unsaturated fat, giving it that distinctive flavor and presence with white veins between its red meat. Although there are several varieties, it is distinguished by its black hoof and thin leg.
