About GAIA Ibérico & Ibércio Pork

What is GaiaIbérico?

GaiaIbérico is a GaiaNetworkUSA brand. Our mission is to carry out an extensive search in order to curate products that have special characteristics, a designation of its origins, and a careful production process that ensures a superior quality.

What is Montaraz?

Montaraz is a Spanish company owned by the “Martin Family”. 130 years of tradition, passion, and love for the Spanish countryside mark their history. For five generations they have transmitted the knowledge behind the breeding of Ibérico pigs and their Jamón Ibérico traditional curing process. (www.Montaraz.es)

Why Ibérico Pigs?

Because it is the best pork around the world. It is a genetic treasure.

The Iberico pig is an exceptional animal. Its purity lies in its untamed and wild character. It is morphologically distinguished throughout the world by its elongated limbs of fine cane. In its meat we find a privileged soft and creamy texture, the result of thousands of years of natural selection in an isolated environment. They come from central and southern Spain.

How is the Ibérico pork raised?

All Montaraz Iberico pigs come from Extremadura and have been raised and fed in the spectacular Extremadura dehesa. Pigs roam freely along their pastures, feeding as nature intended, and slaughter remains artisanal. This heritage, and the care they exert within each stage of its process, make this brand a true icon of Iberian pork and Jamón Ibérico.

What is “la dehesa”?

La dehesa es a unique ecosystem in the world. A place of enormous ecological value and a model of coexistence between man and land, la dehesa is a natural ecosystem of oaks and cork oaks unparalleled in the world. A landscape that only free-range Iberian pigs enjoy every day. Its conservation is essential for the quality of the Iberian pigs.

How is the Jamón Ibérico curing process?

We mature our Jamón Ibérico using a traditional and 100% natural and artisanal process that, for five generations, has allowed Montaraz to produce a Jamón free of additives and preservatives thanks to curing only with Mediterranean Sea salt…. A 100% natural and additive-free process.
